Prince Charles shares his favourite cheesy brunch recipe

Prince Charles has shared the recipe for one of his favourite brunches – and it certainly reflects his love of cheese. 

The royal’s much-loved recipe for Cheesy Baked Eggs was posted on the Clarence House Instagram page to mark the British Cheese Weekender.

“One thing that undoubtedly brings many of us great comfort is good food,” the Prince of Wales wrote.

“It is, therefore, deeply troubling to learn that this crisis risks destroying one of the most wonderful joys in life – British cheese!”

The recipe can be made by using any British cheese, the post says, but home cooks are urged to use organic ingredients where possible.

Prince Charles, 71, is currently isolating in Birkhall, Aberdeenshire, with the Duchess of Cornwall.

He has been patron of the Specialty Cheesemakers Association since 1993.

In the full message on his website, www.princeofwales.gov.uk, he wrote: “To whet your appetite, I am sharing one of my favourite recipes that can be made by using any number of our great British cheeses, which I hope you might be tempted to try.”

So, here you go.

Ingredients:

100g wilted spinach
1 cherry tomato or sundried tomatoes
35g strong soft cheese, eg. Tunworth, Golden Cenarth or other strong soft cheese
1 egg
80ml double cream
15g grated hard cheese, eg. Old Winchester
Fresh basil leaves – torn
Optional: Charcuterie

N.B. Where possible, use organic ingredients.

Method:

1. Butter a small ovenproof dish and line with wilted spinach, making a small well in the centre

2. Place the cherry tomato (quartered) or the sundried tomato (chopped) on top of the spinach

3. Dot the soft cheese around the dish amongst the tomatoes. Add the torn basil leaves. Optional: Add any charcuterie at this point

4. Season with salt and pepper

5. Crack the egg into the centre of the spinach

6. Pour the double cream over the egg – avoid breaking the yolk

7. Sprinkle with grated hard cheese

8. Place in a hot oven (180C) for 8-10 minutes.

9. Let it stand for a few minutes before eating

The Prince of Wales shared his recipe after it was revealed that his favourite dish is a lamb and mushroom risotto.

Chef Darren McGrady, who was personal chef to members of the Royal Family for 15 years, told food website Delish that the Prince of Wales is a big fan of Italian cuisine.

He also said Prince Charles is insistent the chefs at his Highgrove House estate use produce from the grounds to prepare meals.
